Vegan Cookies (and a fun story!)

 Do you love cookies?? I am just going to pretend (and hope!) that everyone said “YES!!”! Well I have a recipe for you!

But before we get to it, I want you to take 30 seconds to close your eyes……are they closed yet?! WAIT! I should probably tell you the next step! Okay, so after you close your eyes, imagine this:

In your hand is a warm, delicious cookie…..okay, so maybe a little more detail will make this even more fun…..you just baked these wonderful, circular creatures….maybe creature is not the right word to describe a cookie?!?!…..ANYWAYS….You lift this marvelous joy round up to your mouth. You inhale and the most delectable smell overwhelms your nose with sweetness. Your lips begin to separate from one another and your taste buds begin to chant: “We want that cookie, we want that cookie!” You know you cannot let your little taste bud friends down, so you come to the conclusion that this is a very good decision on your behalf. Your jaw starts to close shut and a faint crackling noise is made: You just hit a thin layer of crispy deliciousness!! As you begin to chew you notice that it is not only slightly crispy, but it is also chewy!! WHAT?! CHEWY AND CRISPY!! I know, I know…….outstanding!! Your taste buds begin to cheer and ask for more, but you then have to let them know the bad news: “Guys, buddies, pals……Ummm….not so sure how to break it to y’all, but……..there are no more cookies, we ate them all.

 

Long story short, these cookies are ABSOLUTELY delicious! Oh my, I haven’t even addressed the most awesomest part (sorry for the bad grammar….) NOT ONLY are they super yummy, but they are also free of gluten, dairy, soy, and nuts!! You may say: WHAT?! NO WAY!! Actually…..YES WAY!! Delicious vegetarian cookies!! Another bonus: they contain no eggs, so even if they are a little underbaked, no worries! So an amazing treat that taste marvelous and isn’t too unhealthy for you either, sounds like a winner to me!!

After all of that reading I am sure you are ready for me to finally give you the recipe, so you can go and make these for yourself! Well okay, HERE WE GO!!!

 

INGREDIENTS:

-1/2 cup softened vegan (and soy-free) butter (1 stick, or 8 tbsp.)

-3/4 cup sugar-I use organic cane sugar

-1 1/2 cups GF flour

-1 teaspoon baking soda

-1 teaspoon vanilla extract or maple syrup

-1-1 1/2 tablespoons of water

-1 cup of any add-in ingredient you’d like to add (optional)- I added m&m’s (I know, I know….they are NOT vegan!)

 

Method:

-Preheat your amazing oven to 350 degrees-fahrenheit that is 😉

-Cream the butter and sugar together until it becomes so creamy and so fluffy

-Add in flour and baking soda and mix it up-real good, real good!

-Add water and vanilla extract; stir it up, SON!

-Fold in your desired add-ins until it reaches it’s awesomeness 

– Drop by tablespoonfuls onto a foil/parchment-lined cookie sheet; leave an inch or so between each

**(but hey, if the cookies happen to bake together, no problem at all! Just do this: right after you take them out of the oven just cut them apart!)

 

-Bake for 10-15 minutes (depending on how you like the texture)

NOW FOR THE BEST PART…..YOU AND YOUR TASTE BUDS GET TO ENJOY THESE TO THE MAXIMUM LEVEL THAT IS HUMANLY POSSIBLE!!
